The daily board
Our loaves begin with flour, water, salt and a living rye starter. Time does the rest: a long cool rest gives the crust its crackle and the crumb its deep, gently sour character. Every morning, the ovens turn out dark rye, country wheat, seeded loaves and a few small surprises.
We bake for people who know a bag of bread can change the shape of a day. Pick up a loaf for supper, a roll for the tram, or a cake for the people waiting at home.

We are on Pilies Street, a few minutes from Cathedral Square. The first trays arrive before the old town is fully awake; the cake cabinet fills through the day.
